Gluten free carrot cake


  • Grease your cake tin

  • 225 g gluten-free self-raising DOVES FARM flour , plus extra for dusting

  • 2 large free-range eggs

  • 125 g soft brown sugar

  • 125 ml sunflower oil

  • 1 teaspoon ground cinnamon

  • 200 g carrots

  • 50 g walnuts , (optional)


  • 75 g unsalted butter , softened

  • 100 g icing sugar

  • 75 g cream cheese

  • 50 g walnuts

1. Preheat the oven to 190ºC/375ºF/gas 5. Grease your cake tin. Grate your carrots.

2. Add your eggs into a bowl alongside the sugar and oil then mix.

3. Sieve in the flour, spices and the grated carrots, then fold through.

4. Chop up your walnuts and then add to the mix.

5. Pop your mixture into your cake tin and place in oven for approx 35mins.When you think its done, put a knife through the middle and if it comes out clean your cake is perfect.

6 leave it to stand and cool

7.Beat the butter, icing sugaand smooth, then stir in the cream cheese until just combined.

8.Ice your cake and then add your chopped walnuts on the top
