CHOCOLATE CHIP SHORTBREAD

  • 200 g butter or margarine of your choice. If DF please use your preferred alternative. 

  • 110 g  caster sugar and a little extra to sprinkle on top

  • 290 g gluten free Doves Farm plain flour

  • 1/4 tsp Doves Farm Free From xanthan gum

  • 200 g dairy free chocolate chips or your dairy free alternative.

 Mix your sugar and Butter together until it becomes nice and fluffy. Add in your Doves Farm flour and in your Doves Farm Xantham gum.

Pour in your chocolate chips and mix the dough together. Add half a shot glass of luke warm water and knead together on your worktop. Sprinkle some flour on the worktop first.

Line your baking tray with baking paper. place your dough on top and either roll or pat out your dough into a rectangular shape that is approx 1cm in height.

 

Pre heat your oven to 180 degrees 
once it is hot ace your shortbread in the oven for 20-25 mins

 

Once cooked and starting to brown remove from oven.
Sprinkle the remainder of your sugar over the shortbread. I take this opportunity to cut accordingly as the dough would still be nice and soft. Then leave to cool down
